The stench of burnt beet juice contributed to my initial bad roasting experience. :-)Erinhttps://www.blogger.com/profile/01851237905405257521noreply@blogger.comtag:blogger.com,1999:blog-4547202443049989577.post-89518666132731962152012-01-12T10:36:48.243-06:002012-01-12T10:36:48.243-06:00Bravo on your success. I find that an hour in a 400 degree oven is usually right but I make sure I can pierce them with the tip of a knife before I take them out. If they're large, it sometimes takes 1 1/2 hours. Cool, peel, dice, eat...with goat cheese, of course :)Anita at Hungry Couplehttps://www.blogger.com/profile/04218183594835435949noreply@blogger.comtag:blogger.com,1999:blog-4547202443049989577.post-50356704165742436152012-01-12T09:57:08.093-06:002012-01-12T09:57:08.093-06:00Bravo to you for facing your fear and making an in...Bravo to you for facing your fear and making an incredibly delicious salad to boot! I love beets, though I didn't as a child. It's hard to believe that something sitting in the ground can end up so gorgeous and delicious.Anonymoushttps://www.blogger.com/profile/12752458901614211514noreply@blogger.comtag:blogger.com,1999:blog-4547202443049989577.post-32989513348832088822012-01-12T08:28:12.027-06:002012-01-12T08:28:12.027-06:00Mmm, I adore roast beets and goat cheese.
